Ingredients

  • 2 (10 1/2 oz.) cans tomato soup
  • 1 1/2 c. water
  • 1 Tbsp. lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp. onion powder
  • 1/4 tsp. cayenne pepper
  • 1 (10 oz.) pkg. frozen peas
  • 1/4 lb. cooked ham, cut in thin strips
  • 1/4 c. sliced pimento stuffed olives
  • 2 hard-cooked eggs, peeled and sliced

Instructions

  1. In a large saucepan, combine soup, water, lemon juice, garlic, onion powder and pepper.
  2. Mix well.
  3. Add frozen peas; stir to blend.
  4. Let mixture come to a boil.
  5. Reduce heat.
  6. Cover and simmer 10 minutes.
  7. Add ham, olives and eggs, stirring until heated through.
