- Combine the grated mozzarella or Swiss, grated sharp cheddar, chopped green chilies, and sautéed onion in a bowl.
- Beat the eggs until fluffy, then fold into the cheese mixture until fully incorporated.
- Season with salt and pepper to taste.
- Spray an 8‑inch square baking pan with Pam and pour the mixture in.
- Bake at 300°F for about 20 minutes, or until a knife inserted 1 inch from the edge comes out clean.
- Optionally, substitute 1/4 cup chopped jalapeño peppers for the green chilies and onion for a milder heat.
