Ingredients

  • 1 cup grated mozzarella or Swiss cheese
  • 1 cup grated sharp cheddar cheese
  • 1 small can chopped green chilies
  • 2 tablespoons chopped onion, sautéed in butter
  • 6 beaten eggs
  • salt to taste

Instructions

  1. Combine the grated mozzarella or Swiss, grated sharp cheddar, chopped green chilies, and sautéed onion in a bowl.
  2. Beat the eggs until fluffy, then fold into the cheese mixture until fully incorporated.
  3. Season with salt and pepper to taste.
  4. Spray an 8‑inch square baking pan with Pam and pour the mixture in.
  5. Bake at 300°F for about 20 minutes, or until a knife inserted 1 inch from the edge comes out clean.
  6. Optionally, substitute 1/4 cup chopped jalapeño peppers for the green chilies and onion for a milder heat.
