Ingredients

  • 6 eggs
  • 3 cups cottage cheese
  • 2 cups Jack cheese, grated
  • 2 cups Cheddar cheese, grated
  • 3/4 to 1 cup crushed Ritz crackers
  • 1 (4 oz) can chopped green chilies
  • 1 to 1.5 cups chopped ham

Instructions

  1. Save 1/2 cup of each cheese for topping.
  2. Mix and beat eggs in a large bowl.
  3. Add cottage cheese, Jack cheese, Cheddar cheese, crushed crackers, chopped green chilies, and chopped ham to the eggs. Mix well.
  4. Pour the mixture into a buttered or Pam-sprayed 13 x 9-inch baking dish.
  5. Bake at 350°F (175°C) for 40 to 45 minutes, covered with foil.
  6. Remove from oven, then sprinkle the remaining cheeses on top.
  7. Bake uncovered for an additional 10 minutes.
  8. Let the casserole set for 5 minutes before cutting and serving.
  9. Can be frozen for later use.
  10. Serve with salsa for those who like it hotter.
