Juicy chicken meatballs with a flavorful, tender interior, coated and browned to perfection, then simmered in creamy chicken soup for a comforting, satisfying meal.

Ingredients

  • 1 lb. hamburger
  • 1 c. water
  • 1 tsp. salt
  • 1 c. quick oatmeal
  • 1 can cream of chicken soup

Instructions

  1. Mix together uncooked hamburger, water, salt, and uncooked quick oatmeal.
  2. Chill the mixture in the refrigerator for 30 minutes.
  3. After chilling, roll the mixture into meatballs.
  4. Coat all sides of each meatball with flour.
  5. Brown the meatballs on all sides in a skillet with a small amount of oil.
  6. Add undiluted cream of chicken soup to the top of the meatballs and simmer for 20 minutes, ensuring the meatballs do not stick to the pan.
  7. Scoop the soup over the meatballs during simmering to season them well.
