Ingredients

  • 1 (4 1/2 lb.) chicken
  • 3 c. water
  • 1/4 c. soy sauce
  • 1 Tbsp. sugar
  • 1 onion, chopped
  • 1/2 c. sherry
  • 1 tsp. ginger
  • 1 tsp. salt

Instructions

  1. Combine water, soy sauce, sugar, chopped onion, sherry, ginger, and salt in a large pan.
  2. Bring the mixture to a boil.
  3. Add the whole chicken to the pan, cover, and cook for 10 minutes.
  4. Remove the pan from heat and let the chicken stand in the liquid for 20 minutes.
  5. Remove the chicken from the liquid.
  6. Place the chicken on a rack and roast at 375°F (190°C) for about 40 to 50 minutes or until done.
