Ingredients

  • 2 cakes compressed yeast
  • 3 cups milk
  • 1/2 cup lukewarm water
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup currants
  • 10 to 11 cups flour
  • 1/2 teaspoon cardamom
  • 2 teaspoons salt
  • 2 eggs
  • 1/2 cup chopped citron
  • 3/4 cup chopped raisins
  • 1/2 cup candied cherries

Instructions

  1. Dissolve the yeast in 1/2 cup of lukewarm water.
  2. Pour scalded milk over the butter to melt it and let it cool slightly.
  3. When the milk mixture is lukewarm, add the yeast and sugar, stirring to combine.
  4. Add half of the flour and salt to the mixture and beat well for 10 minutes.
  5. Add the beaten eggs and mix thoroughly.
  6. Stir in the fruit (currants, citron, raisins, cherries) and add the remaining flour.
  7. Knead the dough until smooth and elastic.
  8. Allow the dough to rise until doubled in size, then shape and bake as desired.
