Ingredients

  • 1 can julienne beets
  • 1 small can crushed pineapple
  • 1 (3 oz.) lemon jello
  • 1/4 cup sugar
  • pinch of salt
  • 3/4 cup chopped celery
  • 5 or 6 green onions chopped
  • 3/4 cup mayonnaise

Instructions

  1. Dissolve the lemon jello in 1 cup of boiling water and chill until partially set.
  2. Mix the julienne beets, crushed pineapple, chopped celery, and chopped green onions.
  3. Add the sugar and a pinch of salt to the jello and stir until dissolved.
  4. Combine the jello mixture with the beet mixture.
  5. Pour the mixture into a mold or dish and refrigerate until fully congealed.
  6. Spread mayonnaise over the congealed salad before serving.
