Ingredients

  • 5 to 6 slices top round
  • 1/2 lb lean bacon
  • 1 large onion
  • 1 beef bouillon cube
  • prepared mustard

Instructions

  1. Dice the lean bacon and fry until almost crisp.
  2. Add finely chopped onion and continue frying until the onion is transparent.
  3. Drain the bacon and onion mixture thoroughly and set aside.
  4. Lay slices of top round beef on a flat surface.
  5. Sprinkle salt and pepper on both sides of the beef slices.
  6. Spread a little prepared mustard over each slice.
  7. Spread about 1 tablespoon of the bacon-onion mixture over each beef slice.
  8. Roll the beef slices up in a jelly roll fashion and fasten with toothpicks.
  9. Brown the rolled rouladen in hot fat on all sides.
  10. Add about 1 1/2 tablespoons of flour to the pan and cook briefly.
  11. Add approximately 2 to 3 cups of water to make gravy.
  12. Simmer the rouladen in the gravy for at least 1 hour.
  13. Season to taste with salt, pepper, beef bouillon cube, and Knorr all-purpose seasoning.
  14. Serve with homemade spätzle, rice, or mashed potatoes.
