Ingredients

  • 3 qt. water
  • 3 lb. kale
  • 1/4 lb. seasoning meat (fat back, lean salt pork, ham or smoked turkey pieces)
  • 1 tsp. sugar
  • 1 tsp. crushed red pepper
  • salt and pepper to taste

Instructions

  1. Place the seasoned meat in 3 quarts of water with crushed red pepper and cook with the lid on for about 1 1/2 hours or until the meat is tender.
  2. Wash the kale several times and trim off the roots and heavier parts of the leaves.
  3. Remove the meat from the pot and add the cleaned kale to the cooking liquid.
  4. Cook the kale until tender, then replace the meat on top and heat thoroughly.
