Kale Soup

Ingredients

  • 1/2 stick butter or margarine
  • 1 large package linguica, sliced
  • 4 or 5 medium potatoes, peeled and cut in chunks
  • 1 can kidney beans
  • 1/2 head cabbage, chopped (optional)
  • big bunch fresh kale, cleaned well
  • salt

Instructions

  1. Melt butter or margarine in a large pot.
  2. Add sliced linguica and fry until browned.
  3. Add half a pot of water and bring to a boil.
  4. Add peeled and chunked potatoes and cook on high heat until boiling.
  5. Add kidney beans, chopped cabbage (if using), chopped kale, salt, and pepper.
  6. Stir in some ketchup for color.
  7. Reduce heat to medium and cook until potatoes and soup are done, about 20 minutes.
  8. Turn to low and simmer until ready to serve.
