Ingredients

  • 1 box French vanilla cake mix
  • 1 cup sugar
  • 1 large can crushed pineapple
  • 1 large box instant coconut pudding mix
  • 1 cup sour cream
  • 12 oz. carton Cool Whip
  • toasted coconut

Instructions

  1. Prepare the cake according to the package directions and bake in a 13 x 9-inch pan.
  2. Combine undrained crushed pineapple and sugar in a saucepan and heat until it boils, then boil for 2 minutes.
  3. Pierce the hot cake all over with a fork.
  4. Pour the hot pineapple mixture over the cake and let it cool.
  5. Mix the instant coconut pudding according to the package instructions.
  6. Fold in the sour cream into the pudding mixture.
  7. Spread the pudding and sour cream mixture evenly over the cooled cake.
  8. Top with Cool Whip and sprinkle with toasted coconut and nuts.
  9. Refrigerate until ready to serve.
