Ingredients

  • 1 9-inch unbaked pastry shell
  • 4 1/2 cups cubed peeled ripe pears
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 1/4 cup whipping cream
  • 1/4 cup butter or margarine melted
  • 1 teaspoon grated lemon peel

Instructions

  1. Line the unpricked pastry shell with a double thickness of heavy-duty foil.
  2. Bake at 450°F for 8 minutes. Remove the foil; bake an additional 3 minutes.
  3. Reduce oven temperature to 350°F.
  4. Place the cubed, peeled pears in the prepared pastry shell.
  5. In a bowl, combine sugar, flour, and ground nutmeg.
  6. Whisk in eggs, 1/4 cup of cream, melted butter, grated lemon peel, and vanilla extract until smooth.
  7. Pour the custard mixture over the pears in the pastry shell.
  8. Cover the edges loosely with foil to prevent over-browning.
  9. Bake for 50 minutes or until the filling is just set and jiggles slightly.
  10. Remove from oven and cool on a wire rack for 1 hour.
  11. Cover and refrigerate until ready to serve.
