Ingredients

  • 2 Tbsp. vinegar
  • 6 Tbsp. salad oil
  • 1 c. pitted ripe olives
  • 1 (8 oz.) can artichoke hearts
  • 1 (8 oz.) can button mushrooms
  • lettuce and other greens
  • 1 red onion
  • 1 tomato
  • 1 cucumber
  • Parmesan cheese

Instructions

  1. Mix vinegar and oil.
  2. Add olives, artichokes and mushrooms. Stir gently and chill.
  3. When ready to serve, fill a large salad bowl with crisp lettuce.
  4. Pour marinated mix over salad greens. Slice onion, tomato and cucumber on top.
  5. Sprinkle with grated Parmesan cheese.
  6. Serve with the following dressing.
