Katrina'S Pineapple Upside-Down Cake

A luscious pineapple upside-down cake featuring caramelized pineapple slices on a tender cake base, perfect for dessert lovers and suitable for family gatherings or special occasions.

Ingredients

  • 1 (20 oz.) can pineapple
  • 1/3 cup butter
  • 3/4 cup packed brown sugar
  • 1 1/4 cups Post healthy granola
  • 1 yellow cake mix

Instructions

  1. Drain pineapple, reserving 2 tablespoons of juice.
  2. Melt butter in a 13 x 9 x 2-inch pan and stir in brown sugar.
  3. Arrange pineapple slices on the sugar mixture. Sprinkle with reserved pineapple juice and 3/4 of the granola.
  4. Prepare the cake mix, stirring in the remaining granola.
  5. Pour the cake batter into the prepared pan over the pineapple and sugar mixture.
  6. Bake at 350°F for 50 to 55 minutes until a toothpick inserted in the center comes out clean.
  7. Let the cake cool for 5 minutes. Turn it over onto a serving plate just before serving.
