Sweet, buttery caramel corn with rich caramel flavor and a crispy texture, perfect as a snack or party treat for all ages and gatherings.

Ingredients

  • 1 cup butter or margarine
  • 2 cups packed brown sugar
  • 1/2 cup corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 6 quarts popped popcorn

Instructions

  1. Melt butter in a large heavy saucepan.
  2. Stir in brown sugar, corn syrup, and salt; bring to a boil, stirring constantly.
  3. Continue to boil for 5 minutes without stirring.
  4. Remove from heat and stir in vanilla and baking soda.
  5. Pour the caramel mixture over the popped popcorn and mix well.
  6. Divide the coated popcorn into 2 large deep pans.
  7. Bake at 250°F for 1 hour, stirring every 15 minutes.
  8. Cool completely and store in a covered container.
