Ken's Potato Salad is a creamy, tangy dish with crunchy celery and eggs, perfect for summer gatherings and casual family meals.

Ingredients

  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar
  • 1 tsp. dill weed
  • 3 - 5 diced celery stalks
  • 1 small onion, chopped
  • 8 - 10 medium peeled potatoes, boiled
  • 1/2 tsp. dry mustard
  • 3 - 4 hard boiled eggs, chopped
  • mayonnaise, light or regular
  • salt and pepper to taste

Instructions

  1. Cube the cooked potatoes into 1-inch pieces and place in a large bowl.
  2. Add diced celery stalks, chopped onion, and chopped hard boiled eggs to the potatoes.
  3. Mix in sugar, vinegar, dill weed, dry mustard, salt, and pepper.
  4. Gradually add mayonnaise until reaching desired creaminess.
  5. Chill the potato salad for at least three hours.
  6. Before serving, add salt and pepper to taste.
  7. Garnish with paprika for presentation.
