Ingredients

  • 1 whole ham
  • water to cover
  • 1 cup brown sugar
  • 1 cup vinegar
  • 3 tablespoons bay leaves
  • 1 tablespoon whole cloves
  • 2 tablespoons whole mixed spices

Instructions

  1. Put the whole ham in a Dutch oven or other kettle with a tight lid.
  2. Boil the ham for 45 minutes.
  3. Add brown sugar, vinegar, bay leaves, whole cloves, and mixed spices to the kettle.
  4. Bring the mixture back to a boil and boil for 5 minutes.
  5. Allow the ham to stand and steep for several hours or overnight before serving.
