Kieske is a hearty, comforting dish combining tender pork hocks, pearl barley, and onions, perfect for family dinners or cold weather hearty meals.

Ingredients

  • 1 or 2 pkg. fresh pork hocks
  • 1 c. pearl barley
  • 1 medium fresh onion

Instructions

  1. Cook pork hocks until done in enough water to cover the meat. Remove the meat and let it cool.
  2. In the same water, cook the pearl barley until tender.
  3. When the meat is completely cool, grind or shred it.
  4. Grind or finely chop the onion.
  5. Add the cooked pearl barley to the meat and cook for an additional 5 minutes.
  6. If the mixture is dry, add a little water to prevent it from being too thick.
  7. Season with salt and pepper to taste.
  8. Optionally, put the mixture in a pan and bake until light brown before serving.
