Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 2 eggs
  • 1 cup Swiss or Gruyere cheese, grated
  • 1/2 cup chopped onion
  • dash of white pepper
  • 1 tablespoon cornstarch

Instructions

  1. Line an unbaked pie shell with pastry.
  2. Bake at 425°F for 8 minutes.
  3. Remove from oven and set aside.
  4. In a blender, combine mayonnaise, milk, eggs, and cornstarch.
  5. Process until smooth.
  6. Add cheese, onion, and pepper, then blend at low speed for 2 to 3 seconds to combine.
  7. Fold in crab meat.
  8. Pour into pastry shell.
  9. Bake at 350°F for 35 to 45 minutes until top puffs up and is golden brown.
  10. Remove from oven and let rest for 10 minutes before serving to allow the custard to set.
