Koblihy are classic sweet doughnuts with a tender, airy texture, filled with prunes or poppy seed, perfect for a delightful treat or special occasion.

Ingredients

  • 1 large yeast cake
  • 3 Tbsp. sugar
  • 1/2 cup shortening
  • 1/2 cup warm milk
  • 1 jigger bourbon whiskey
  • 6 to 8 cups flour
  • Pinch of salt

Instructions

  1. Dissolve the yeast cake in a small amount of warm water.
  2. Add sugar, shortening, salt, warm milk, one cup of flour, and bourbon whiskey, and cream together.
  3. Gradually add flour one cup at a time to make a soft dough, working the batter like for kolaches.
  4. Cover the dough and let it rise for about 45 minutes to one hour.
  5. Roll out the dough with a rolling pin and cut circles with a glass.
  6. Fill each circle with prunes or poppy seed filling.
  7. Pinch the circle closed and place the doughnut on a warmed floured cloth, letting it rise for about 30 minutes.
  8. Turn the doughnuts over and let rise again to expand.
  9. Uncover after 3 minutes and start frying in a deep container.
  10. Fry until golden brown on each side, then lift with a wired spatula and place on absorbent paper.
  11. Roll the fried doughnuts lightly in granulated sugar.
