Kooky Salad

A crunchy, flavorful layered salad combining fresh vegetables, peas, and cheese, topped with mayonnaise and Parmesan. Perfect for potlucks and family gatherings.

Ingredients

  • 1 head lettuce, shredded
  • 1 medium onion, sliced thin and separate
  • 1 small can water chestnuts, sliced
  • 1 pkg. small (approximately 10 oz.) frozen peas
  • 3/4 cup cut up celery

Instructions

  1. Cook the peas for 7 minutes and drain.
  2. Layer shredded lettuce in an oblong glass pan.
  3. Add sliced onions, sliced water chestnuts, cooked peas, and chopped celery in layers in the order given.
  4. Spread with 1/2 pint of real mayonnaise, and season with salt and pepper to taste.
  5. Sprinkle with 1/2 cup Parmesan cheese.
  6. Cover with foil and refrigerate overnight before serving.
