Kota Kapama

Ingredients
- 3 lb. chicken, cut up ⓘ
- salt and pepper to taste
- 2 Tbsp. margarine or butter ⓘ
- 2 Tbsp. olive or vegetable oil ⓘ
- 1 medium onion, chopped ⓘ
- 1 large clove garlic, chopped ⓘ
- 1/8 tsp. ground cloves ⓘ
- 1 (4-inch) cinnamon stick ⓘ
- 1/4 c. white wine (optional) ⓘ
- 1 1/2 c. peeled canned tomatoes, drained and chopped ⓘ
- 2 Tbsp. tomato paste ⓘ
- 2 c. water ⓘ
Instructions
- Sprinkle the chicken pieces with salt and pepper.
- In a large saucepan, heat the margarine or butter and oil over medium heat.
- Saute the chicken pieces, turning often, until all sides are lightly browned.
- Add the chopped onion and garlic, and saute until transparent, but not brown.
- Add ground cloves and the cinnamon stick, and stir to combine.
- Pour in the white wine (if using), then add the chopped tomatoes and tomato paste, diluted in a little water.
- Mix well with the chicken pieces.
- Add the water, bring to a boil, then reduce heat, cover, and simmer for 30 to 45 minutes, or until the chicken is tender.
- Stir occasionally during cooking.
- Taste and adjust seasoning if needed, then serve with pasta or rice.
