Ingredients

  • 3 lb. chicken, cut up
  • salt and pepper to taste
  • 2 Tbsp. margarine or butter
  • 2 Tbsp. olive or vegetable oil
  • 1 medium onion, chopped
  • 1 large clove garlic, chopped
  • 1/8 tsp. ground cloves
  • 1 (4-inch) cinnamon stick
  • 1/4 c. white wine (optional)
  • 1 1/2 c. peeled canned tomatoes, drained and chopped
  • 2 Tbsp. tomato paste
  • 2 c. water

Instructions

  1. Sprinkle the chicken pieces with salt and pepper.
  2. In a large saucepan, heat the margarine or butter and oil over medium heat.
  3. Saute the chicken pieces, turning often, until all sides are lightly browned.
  4. Add the chopped onion and garlic, and saute until transparent, but not brown.
  5. Add ground cloves and the cinnamon stick, and stir to combine.
  6. Pour in the white wine (if using), then add the chopped tomatoes and tomato paste, diluted in a little water.
  7. Mix well with the chicken pieces.
  8. Add the water, bring to a boil, then reduce heat, cover, and simmer for 30 to 45 minutes, or until the chicken is tender.
  9. Stir occasionally during cooking.
  10. Taste and adjust seasoning if needed, then serve with pasta or rice.
