Ingredients

  • 25 to 30 medium cucumbers
  • 8 large white onions
  • 2 large sweet peppers
  • 1/2 cup salt
  • 5 cups cider vinegar
  • 5 cups sugar
  • 2 teaspoons mustard seed

Instructions

  1. Wash cucumbers and slice them paper thin using a slicer.
  2. Chop onions and peppers.
  3. Combine cucumbers, onions, peppers, and salt in a large bowl.
  4. Let stand for 3 hours and then drain.
  5. Combine vinegar, sugar, and mustard seed in a large kettle.
  6. Bring the mixture to a boil.
  7. Add drained cucumbers to the boiling mixture.
  8. Heat thoroughly but do not boil.
  9. Pack hot mixture into sterilized jars and seal immediately.
