Creamy, cheesy potato casserole with peppers, onions, and pimientos, topped with crunchy corn flakes—perfect for comforting family dinners or potlucks.

Ingredients

  • 6 large potatoes, cooked with skins on, cooled, peeled and sliced
  • 1 green pepper, chopped
  • 1 large onion, chopped
  • 1 jar pimientos
  • 1/4 box Velveeta cheese
  • 1/4 cup milk
  • 1 stick oleo

Instructions

  1. Put sliced potatoes in a casserole dish.
  2. Add chopped green pepper, chopped onion, and pimientos over the potatoes.
  3. Repeat the process until all ingredients are used.
  4. In a saucepan, melt Velveeta cheese with milk and butter (oleo).
  5. Pour the melted cheese mixture over the layered potatoes and vegetables.
  6. Top with corn flakes.
  7. Cover with foil and bake at 350°F for 30 minutes.
