Ingredients

  • 3 beaten eggs
  • 1/3 cup fine dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1/2 teaspoon dried thyme crushed
  • 1/4 teaspoon Worcestershire sauce
  • several dashes hot pepper sauce
  • 1 (10 oz.) package frozen chopped spinach cooked and well drained
  • 1/3 cup chopped celery
  • 3 tablespoons sliced green onions

Instructions

  1. Combine eggs, bread crumbs, Parmesan cheese, minced garlic, dried thyme, Worcestershire sauce, hot pepper sauce, and 1/4 teaspoon salt in a bowl.
  2. Add cooked and well-drained chopped spinach, chopped celery, and sliced green onions to the mixture. Mix well.
  3. Cut tomatoes crosswise and scoop out the centers, leaving 1/4-inch thick shells.
  4. Using a sharp knife, make a sawtooth cut around the edges of the tomato shells.
  5. Spoon the spinach and egg mixture into the tomato shells.
  6. Sprinkle the filled shells with bread crumbs.
  7. Place the stuffed tomatoes in a 10 x 6 x 2-inch baking dish.
  8. Bake, covered, in a 375°F oven for 20 to 25 minutes.
