Ingredients

  • 2 eggs, beaten
  • 1 1/2 cups sugar
  • 1/2 cup oleo, softened
  • 1/4 cup flour
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 2 cups Angel Flake coconut

Instructions

  1. Mix eggs and sugar until well combined.
  2. Add oleo, flour, milk, vanilla, and almond extract; mix well.
  3. Stir in 1 1/2 cups of coconut.
  4. Pour the mixture into an unbaked 9-inch pie crust.
  5. Top with the remaining 1/2 cup of coconut.
  6. Bake at 325°F for 50 to 60 minutes until set and golden.
