Kugeli's Casserole is a hearty, comforting dish of grated potatoes, bacon, and onions baked to perfection, ideal for family dinners and potlucks with rich, savory flavors.

Ingredients

  • 5 lb. Idaho potatoes
  • 1 large onion
  • 1 lb. bacon
  • salt
  • pepper
  • 2 eggs
  • 1 cup hot milk

Instructions

  1. Fry the bacon until crispy.
  2. Saute the diced onion in the same pan with the bacon fat.
  3. Remove the bacon and onion with a slotted spoon and set aside.
  4. Peel the Idaho potatoes.
  5. Grate the potatoes by hand using the fine side of a grater.
  6. Drain off excess liquid from the grated potatoes.
  7. Add the cooked bacon and sautéed onion to the grated potatoes.
  8. Mix in salt, pepper, eggs, and hot milk until well combined.
  9. Place the mixture into an ovenproof casserole dish.
  10. Bake at 350°F (175°C) for 1 hour until the top is nicely browned.
  11. Serve topped with sour cream or applesauce.
