Tarragon Pork Chops

Ingredients

  • 4 loin pork chops, 1-inch thick
  • 1 1/2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 3/4 lb. fresh mushrooms, sliced
  • 1/2 cup dry white wine
  • 1 Tbsp. dried tarragon

Instructions

  1. Trim fat and bone from the pork chops and pat them dry.
  2. Heat 1 tablespoon of butter in a frying pan over medium-low heat.
  3. Add the pork chops to the pan.
  4. Cook the pork chops for 6 minutes on each side.
  5. Check for doneness and cook longer if necessary.
  6. Add the sliced mushrooms to the pan and cook until tender.
  7. Pour in the white wine and sprinkle with dried tarragon.
  8. Simmer until the sauce slightly thickens and flavors meld.
