Laban is a traditional fermented yogurt drink with a tangy flavor, creamy texture, and probiotic benefits, perfect for breakfast or as a refreshing beverage.

Ingredients

  • 2 qt. milk
  • 3 Tbsp. starter

Instructions

  1. Bring milk to a boil.
  2. When milk rises to the top of the pan, remove from heat and allow to cool.
  3. In a large Pyrex bowl, mix starter until smooth.
  4. As soon as the milk has cooled, when you can hold your finger in the milk and count to 10, pour the milk into the bowl, stirring very well.
  5. Cover tightly with a lid and a heavy bath towel.
  6. Keep in a warm place for at least 7 hours or overnight until thickened (do not disturb).
  7. Remove excess water by placing a terry cloth over the Laban. Refrigerate.
