Lamb Chop Casserole

A hearty lamb chop casserole featuring rice, tomato soup, and cheese, perfect for comforting family dinners with rich flavors and tender meat. Suitable for meat lovers.

Ingredients

  • 4 lamb chops
  • 2 oz. long grain rice
  • 1 packet or 1 tin tomato soup
  • 1 medium onion
  • 2 oz. fresh white breadcrumbs
  • 2 oz. grated cheese
  • pinch of thyme

Instructions

  1. Prepare the tomato soup if using a packet.
  2. Wash the rice and put it in the bottom of a large casserole dish.
  3. Brown the lamb chops in a frying pan, if desired, and place them on top of the rice.
  4. Cover with chopped onion.
  5. Pour the tomato soup over the ingredients and sprinkle with thyme.
  6. Cover and bake for 1 hour at 350°F (gas mark 6).
  7. Remove the lid, top with breadcrumbs and grated cheese, and bake for a further 30 minutes until the top is golden brown and bubbly.
  8. Serve with salad or green vegetables.
