A flavorful turkey and veggie pocket filled with fresh vegetables, melted cheese, and seasoned turkey, perfect for a quick, portable meal suitable for lunch or dinner.

Ingredients

  • 12 oz. cooked turkey, coarsely chopped
  • 1 oz. fresh mushrooms, thinly sliced
  • 2 green onions, shredded
  • 1/2 cup red bell pepper, cut in thin strips
  • 3/4 cup grated Mozzarella cheese
  • salt and pepper to taste
  • 3 pita pocket breads, halved

Instructions

  1. Combine the cooked turkey, sliced mushrooms, shredded green onions, red bell pepper strips, grated mozzarella cheese, salt, and pepper in a bowl.
  2. Cover and refrigerate for 1 hour to allow the flavors to blend.
  3. Place 1 cup of the turkey mixture into each halved pita pocket.
  4. Wrap securely and store for trips or serve immediately.
