Lamb Kofta Platter
Ingredients
- 1 1/2 lbs ground lamb ⓘ
- 1 medium brown onion, chopped finely ⓘ
- 1 clove garlic, crushed ⓘ
- 1 tsp ground cumin ⓘ
- 1 tsp ground coriander
- 2/3 cup stale bread crumbs
- 1 large egg, beaten lightly
- None None Salt and freshly ground black pepper
- 4 None pita pockets ⓘ
- 1 tbsp olive oil ⓘ
- 1 1/2 cups purchased tabbouleh ⓘ
- 1 None medium tomato, chopped finely ⓘ
- 1 cup hummus ⓘ
- 1 tsp extra virgin olive oil ⓘ
- 1/4 tsp ground paprika ⓘ
Instructions
- Combine lamb, onion, garlic, spices, breadcrumbs, egg, salt and pepper in a medium bowl; mix well.
- Shape the mixture into 12 ovals and thread onto skewers. Cook the skewers on a heated, oiled grill pan (or outdoor grill) until browned and cooked through.
- Brush pita bread with oil, cook on heated grill pan until browned.
- Combine tabbouleh and tomato with salt and pepper to taste in a bowl. Drizzle hummus with extra-virgin olive oil, sprinkle with paprika.
- Arrange kofta skewers, bread, tabbouleh, hummus, beet dip and lemon wedges, if desired, on a serving platter.
