Ingredients

  • 2 tbsp vegetable oil
  • 2 1/4 lb deboned lamb shoulder, trimmed, roughly chopped
  • 2 None medium onions, thinly sliced
  • 1 inch fresh ginger, thinly sliced
  • 2 None fresh long red chilies, thinly sliced
  • 1 None red pepper, roughly chopped
  • 2 tsp ground cumin
  • 2 tsp ground allspice
  • 1 None cinnamon stick
  • 2 (13.5 oz) cans chopped tomatoes
  • 2 tsp lime zest
  • 2 tbsp lime juice
  • 1/4 cup light brown sugar

Instructions

  1. Heat 1 tbsp oil in a large saucepan. Cook lamb, in batches, until browned all over. Remove from pan.
  2. Add remaining oil. Cook onions, ginger, chilies, pepper and spices, stirring, until onions have softened. Return lamb to pan along with remaining ingredients. Simmer, covered, for 1 hour, or until lamb is tender.
