  • 1 (19 oz.) can Las Palmas green chile enchilada sauce
  • 8 corn tortillas
  • 3/4 c. dairy sour cream

  1. In a small bowl, combine turkey, 2 cups of cheese, green chiles, and onion.
  2. In a small skillet, bring enchilada sauce to a boil; remove from heat.
  3. Dip each tortilla into the heated sauce to soften.
  4. Spoon 1/3 cup of turkey mixture and 2 tablespoons of sour cream down the center of each tortilla.
  5. Roll each tortilla.
  6. Place tortillas seam side down in a 12 x 8-inch baking dish.
  7. Pour remaining heated enchilada sauce over the top.
  8. Sprinkle with remaining 1 cup of cheese.
  9. Bake for 20 minutes at 350°.
