Ingredients

  • 1 c. sour cream
  • 1 can cream of mushroom soup
  • 1 (4 oz.) can chopped green chilies
  • 1 (7 oz.) can green chili salsa
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground coriander
  • 1 lb. spicy ground sausage
  • 2 Tbsp. butter
  • 6 eggs
  • 1/4 c. cottage cheese
  • 1 Tbsp. chopped fresh parsley
  • 1/4 c. finely chopped green onion
  • 8 (12-inch) flour tortillas
  • 1 c. grated Cheddar cheese
  • 1 c. grated Monterey Jack cheese

Instructions

  1. Whisk sour cream, cream of mushroom soup, chopped green chilies, green chili salsa, ground cumin, and ground coriander together in a mixing bowl.
  2. Saute the spicy ground sausage until browned, then drain on a paper towel and crumble.
  3. Melt butter in a skillet over medium heat; add slightly beaten eggs and cottage cheese, blending well.
  4. Add chopped parsley and finely chopped green onion to the egg mixture and cook lightly until set.
  5. Add 1 tablespoon of the sauce mixture and the cooked sausage to the egg mixture; remove from heat when set.
  6. Preheat oven to 325°F (160°C).
  7. Butter the flour tortillas and layer them in a baking dish.
  8. Pour the sausage and egg mixture over the tortillas.
  9. Spread grated Cheddar and Monterey Jack cheeses on top.
  10. Bake in the preheated oven until cheese is melted and bubbly, about 20-25 minutes.
