Mexican Breakfast

Ingredients
- 1 c. sour cream ⓘ
- 1 can cream of mushroom soup ⓘ
- 1 (4 oz.) can chopped green chilies ⓘ
- 1 (7 oz.) can green chili salsa ⓘ
- 1/4 tsp. ground cumin ⓘ
- 1/4 tsp. ground coriander ⓘ
- 1 lb. spicy ground sausage
- 2 Tbsp. butter ⓘ
- 6 eggs ⓘ
- 1/4 c. cottage cheese ⓘ
- 1 Tbsp. chopped fresh parsley ⓘ
- 1/4 c. finely chopped green onion ⓘ
- 8 (12-inch) flour tortillas ⓘ
- 1 c. grated Cheddar cheese ⓘ
- 1 c. grated Monterey Jack cheese ⓘ
Instructions
- Whisk sour cream, cream of mushroom soup, chopped green chilies, green chili salsa, ground cumin, and ground coriander together in a mixing bowl.
- Saute the spicy ground sausage until browned, then drain on a paper towel and crumble.
- Melt butter in a skillet over medium heat; add slightly beaten eggs and cottage cheese, blending well.
- Add chopped parsley and finely chopped green onion to the egg mixture and cook lightly until set.
- Add 1 tablespoon of the sauce mixture and the cooked sausage to the egg mixture; remove from heat when set.
- Preheat oven to 325°F (160°C).
- Butter the flour tortillas and layer them in a baking dish.
- Pour the sausage and egg mixture over the tortillas.
- Spread grated Cheddar and Monterey Jack cheeses on top.
- Bake in the preheated oven until cheese is melted and bubbly, about 20-25 minutes.
