Layered Mexican Corn Bread

Ingredients

  • 1/2 bell pepper, chopped
  • 1 onion, chopped fine
  • jalapeno peppers, sliced (to taste)
  • 2 eggs
  • 1/2 lb. hamburger meat, browned and drained
  • 1 c. corn meal
  • 1 c. milk
  • 8 oz. Cheddar cheese, grated
  • 1 large can cream-style corn

Instructions

  1. Mix eggs, cornmeal, milk and corn.
  2. Pour 1/2 of this mixture into greased 9 x 5-inch baking dish.
  3. Sprinkle 1/2 onion, bell pepper and jalapeno pepper over this.
  4. Sprinkle 1/2 cheese over this, next add hamburger meat, then remaining cheese, onions and peppers.
  5. Spread remaining cornbread mixture over top.
  6. Bake at 350°
  7. for 45 to 55 minutes, or until brown and firm in middle.
