Ingredients

  • 6 cups cucumbers, thinly sliced
  • 1 cup Vidalia onion, sliced
  • 1 cup bell pepper, chopped
  • 1 tablespoon salt
  • 1 cup vinegar
  • 2 cups sugar
  • 1/2 teaspoon celery seed

Instructions

  1. Place cucumbers, onion, bell pepper, and salt in a large bowl. Refrigerate for 2 hours (do not drain).
  2. Whisk together vinegar, sugar, and celery seed.
  3. Pour the vinegar mixture over the cucumber mixture.
  4. Store in the refrigerator and serve as desired.
