Leftover Coffee Bars

Ingredients

  • 1 c. raisins
  • 1/2 tsp. cinnamon
  • 1/2 c. sugar
  • 1 1/2 c. flour
  • 1/3 c. chopped nuts
  • 2 eggs
  • 1/3 c. strong coffee
  • 1/3 c. shortening
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla

Instructions

  1. Combine raisins, coffee and cinnamon; set aside.
  2. Cream shortening and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition. Beat in coffee mixture and add vanilla.
  4. Mix flour, baking powder, soda and salt.
  5. Add to creamed mixture; mix well and add nuts.
  6. Spread in greased and floured 10 x 15 x 1-inch pan.
  7. Bake at 325° for 25 to 30 minutes.
