"Leftover Roast" Casserole

A hearty casserole combining savory leftover roast with cheesy, spicy layers and crispy Doritos, perfect for a comforting, flavorful meal using simple ingredients.

Ingredients

  • leftover roast, chopped
  • 1 1/2 cups sour cream
  • 1 1/2 cups grated cheese
  • 1 can green chilies, chopped
  • 1 large onion, chopped
  • Doritos (enough to make 2 layers, uncrushed)
  • enchilada sauce packet (for half recipe)

Instructions

  1. Make half of the enchilada sauce recipe and set aside.
  2. In a mixing bowl, combine 1 1/2 cups sour cream with grated cheese.
  3. Add chopped green chilies and chopped onion to the mixture.
  4. Grease and flour the bottom of a baking dish.
  5. Spread a layer of uncrushed Doritos on the bottom of the dish.
  6. Scatter chopped leftover roast over the Doritos.
  7. Spread the cheese and sour cream mixture over the roast.
  8. Add another layer of uncrushed Doritos on top.
  9. Pour the prepared enchilada sauce over all layers.
  10. Bake for approximately 25 minutes at 325°F.
