Ingredients

  • 3 beaten eggs
  • 2 cans creamed corn
  • 1 pkg. Jiffy corn muffin mix
  • 1/3 cup oil
  • 1/2 to 1 cup Cheddar cheese
  • 1 can chopped green chilies
  • salt to taste

Instructions

  1. Preheat the oven and grease a 9 x 12-inch baking dish.
  2. In a mixing bowl, combine the beaten eggs, creamed corn, corn muffin mix, oil, chopped green chilies, and salt.
  3. Mix all ingredients thoroughly until well blended.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Sprinkle the grated Cheddar cheese over the top.
  6. Bake in the preheated oven for approximately 1 hour or until set in the center.
