Ingredients

  • 1 cup sugar
  • 3 scant tablespoons flour
  • pinch of salt
  • juice of 1 lemon
  • 2 egg yolks
  • 1 cup milk
  • 2 egg whites

Instructions

  1. Combine the sugar, flour, and a pinch of salt in a bowl.
  2. Beat together the lemon juice, egg yolks, and milk until well blended.
  3. Add the lemon mixture to the dry ingredients and beat until smooth.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the lemon mixture.
  6. Pour the combined mixture into an unbaked pie crust.
  7. Bake in a moderate oven at 350°F (175°C) for 30 minutes or until set and lightly golden.
