Lemon Coconut Cake

Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 1/4 cups flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 cup water
  • 1/4 cup lemon juice

Instructions

  1. Cream the shortening and sugar together until light and fluffy.
  2. Add well beaten egg yolks to the creamed mixture.
  3. Sift dry ingredients and add alternately with water and lemon juice or milk, starting and ending with dry ingredients.
  4. Fold in stiffly beaten egg whites.
  5. Bake in three layers in a moderate oven for 15 to 20 minutes until a toothpick inserted comes out clean.
  6. Allow the cakes to cool completely.
  7. Put together with Lemon Coconut Filling and sprinkle with shredded coconut.
