Lemon Coconut Cake

Instructions
- Cream the shortening and sugar together until light and fluffy.
- Add well beaten egg yolks to the creamed mixture.
- Sift dry ingredients and add alternately with water and lemon juice or milk, starting and ending with dry ingredients.
- Fold in stiffly beaten egg whites.
- Bake in three layers in a moderate oven for 15 to 20 minutes until a toothpick inserted comes out clean.
- Allow the cakes to cool completely.
- Put together with Lemon Coconut Filling and sprinkle with shredded coconut.
