Lemon Coconut Frosting

Instructions
- Dissolve 2 tablespoons of cornstarch in 1/2 cup water and set aside.
- Bring 1 cup water to a boil in a saucepan.
- Stir in 2 cups sugar, 1 tablespoon grated lemon rind, and 3 1/2 tablespoons lemon juice.
- Return to a boil and cook for 7 minutes, until the candy thermometer reaches soft ball stage.
- Gradually stir in the cornstarch mixture.
- Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
- Remove from heat and stir in 2 tablespoons of shredded coconut.
- Allow the frosting to cool.
- Stir the frosting just before spreading on a cake.
