Ingredients

  • 2 cups sugar
  • 1 1/2 cups water
  • 2 tablespoons cornstarch
  • 1 tablespoon grated lemon rind
  • 3 1/2 tablespoons lemon juice
  • 2 tablespoons shredded coconut

Instructions

  1. Dissolve 2 tablespoons of cornstarch in 1/2 cup water and set aside.
  2. Bring 1 cup water to a boil in a saucepan.
  3. Stir in 2 cups sugar, 1 tablespoon grated lemon rind, and 3 1/2 tablespoons lemon juice.
  4. Return to a boil and cook for 7 minutes, until the candy thermometer reaches soft ball stage.
  5. Gradually stir in the cornstarch mixture.
  6. Cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
  7. Remove from heat and stir in 2 tablespoons of shredded coconut.
  8. Allow the frosting to cool.
  9. Stir the frosting just before spreading on a cake.
