Ingredients

  • 1 lemon yellow cake mix
  • 1/2 cup margarine
  • 1 egg
  • 3 egg yolks
  • 2 cups saltines, crushed
  • 1 (14 oz.) can evaporated milk
  • 1/2 cup lemon juice

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9-inch dish.
  3. In a bowl, beat the cake mix, margarine, and 1 egg until crumbly.
  4. Stir in crushed saltines and press into the bottom of the prepared dish, reserving 2 cups of the crumb mixture.
  5. Bake for 15 to 20 minutes until golden.
