- Add grated lemon rind and lemon juice to the mixture.
- Chill until thick like egg whites.
- Place in a mixing bowl and add chilled evaporated milk; beat until fluffy.
- Mix melted margarine and vanilla wafer crumbs.
- Press the crumb mixture into two 11 x 7 x 1 1/2-inch pans.
- Reserve about 1/2 cup of the wafer crumbs for topping.
- Spoon the jello mixture into the prepared pans.
- Sprinkle the reserved crumbs over the top.
- Set until firm and keep cold before serving.
