Lemon Crumb Dessert

Ingredients

  • 3 oz. lemon jello
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 2 c. boiling water
  • 1 1/2 tsp. grated lemon rind
  • 2/3 c. lemon juice
  • 2 cans Carnation evaporated milk, chilled
  • 1/3 c. melted margarine
  • 2 c. vanilla wafer crumbs

Instructions

  1. Dissolve lemon jello, sugar, and salt in boiling water.
  2. Add grated lemon rind and lemon juice to the mixture.
  3. Chill until thick like egg whites.
  4. Place in a mixing bowl and add chilled evaporated milk; beat until fluffy.
  5. Mix melted margarine and vanilla wafer crumbs.
  6. Press the crumb mixture into two 11 x 7 x 1 1/2-inch pans.
  7. Reserve about 1/2 cup of the wafer crumbs for topping.
  8. Spoon the jello mixture into the prepared pans.
  9. Sprinkle the reserved crumbs over the top.
  10. Set until firm and keep cold before serving.
