Ingredients

  • 2 c. sugar
  • 1 c. margarine
  • 3 Tbsp. grated lemon rind
  • 2/3 c. lemon juice
  • 2 tsp. cornstarch
  • 4 eggs

Instructions

  1. Combine sugar, margarine, grated lemon rind, lemon juice, and cornstarch in the top of a double boiler.
  2. Cook over simmering water, stirring constantly, until the butter melts.
  3. Gradually stir about 1/4 of the hot mixture into the beaten eggs; add to the remaining hot mixture, stirring constantly until the mixture thickens and coats a spoon (about 15 minutes).
  4. Remove from heat; cool. Cover and refrigerate.
