Ingredients

  • 4 egg whites
  • 1 cup nonfat dry milk
  • 1 2/3 cups water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 2 tablespoons plus 1 teaspoon sugar
  • 1 teaspoon grated fresh lemon peel

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Lightly oil 4 (6-ounce) custard cups or spray with nonstick cooking spray.
  3. In a medium bowl, combine egg whites, nonfat dry milk, water, vanilla extract, lemon extract, sugar, and grated lemon peel.
  4. Beat with a fork or wire whisk for several minutes until well blended.
  5. Pour the mixture into the prepared custard cups.
  6. Place the cups in a baking dish and add hot water to reach halfway up the sides of the cups.
  7. Bake for about 25 minutes or until set.
  8. Remove from oven, let cool slightly, and serve.
