Ingredients

  • 1 (3 oz.) pkg. lemon Jell-O
  • 1 c. boiling water
  • large can crushed pineapple with juice
  • 8 oz. cream cheese
  • 1/2 c. sugar
  • 8 oz. Cool Whip

Instructions

  1. Mix pineapple and sugar in a saucepan and bring to a boil. Reduce heat and simmer for 15 minutes.
  2. Remove from heat and cool.
  3. Mix Jell-O with boiling water.
  4. Stir in softened cream cheese and mix well, then add the pineapple.
  5. Chill until thickened, then fold in Cool Whip.
  6. Put in a Pyrex dish and chill until firm.
