Ingredients

  • 1 cup crushed graham crackers
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon lemon rind
  • 3 tablespoons lemon juice
  • 1 cup whipping cream

Instructions

  1. Beat egg yolks with a beater, adding sugar.
  2. In a double boiler, beat the egg yolks and sugar over boiling water until thick, about 3 minutes.
  3. Remove from heat; add lemon rind and lemon juice.
  4. Beat egg whites until stiff peaks form and fold into the lemon mixture.
  5. Whip the cream and fold all the ingredients together.
  6. Line a tray with wax paper.
  7. Sprinkle half of the crushed graham crackers on the bottom of the tray.
  8. Pour the lemon mixture into the tray and sprinkle the remaining crumbs on top.
  9. Freeze for at least 3 hours before serving.
