- Beat egg yolks with a beater, adding sugar.
- In a double boiler, beat the egg yolks and sugar over boiling water until thick, about 3 minutes.
- Remove from heat; add lemon rind and lemon juice.
- Beat egg whites until stiff peaks form and fold into the lemon mixture.
- Whip the cream and fold all the ingredients together.
- Line a tray with wax paper.
- Sprinkle half of the crushed graham crackers on the bottom of the tray.
- Pour the lemon mixture into the tray and sprinkle the remaining crumbs on top.
- Freeze for at least 3 hours before serving.
