Ingredients

  • 1/2 cup Worcestershire sauce
  • 1/3 cup lemon juice
  • 1/2 teaspoon cayenne pepper
  • 4 drops Tabasco
  • 1/2 teaspoon ground thyme

Instructions

  1. Mix Worcestershire sauce, lemon juice, cayenne pepper, Tabasco, and ground thyme in a jar with a tight-fitting lid; shake well to mix thoroughly.
  2. The marinade can be stored in the refrigerator for several weeks if not used all.
  3. Wash the catfish fillets and pat dry.
  4. Cover the fillets with the marinade and refrigerate for at least 1 hour, up to 4 hours.
  5. Preheat a medium-hot fire for grilling.
  6. Grill the marinated fillets over the fire, basting with the marinade and turning the fish several times.
  7. Cook for about 10 minutes until the fish is cooked through.
  8. Serve immediately with a wedge of lemon.
